Grease Control Equipment
All new or renovated Food Service Facilities (FSFs) are required to install and maintain grease control equipment at their facility to capture the fats, oils, and grease (FOG) produced on site. KUB will determine the type and size of the grease control equipment required based on the facility. The amount and type of food prepared or served and the plumbing fixtures within the facility all play a role in determining the equipment required.
All grease control equipment will be installed where it is easy for inspections, cleaning, and removal of the grease at any time and be in an area that is sufficient distance from any air intake. All grease control equipment within the KUB wastewater collection system is subject to random inspections to ensure program compliance. Maintaining grease control equipment is imperative to prevent future problems and costly additional expenses.

Grease Interceptor - Installation

Grease interceptors must be installed to KUB Standards and Specifications, and a follow up inspection completed by both KUB and local plumbing inspectors before the FSF opens to the public.

Be sure to secure a plumbing permit and contact your local Plumbing Inspector’s Office.

Be sure to have grease interceptor sized by KUB prior to purchasing any equipment.

Grease Interceptor - Maintenance

Grease interceptors must be maintained as outlined in Grease Interceptor Standards and Specifications.

All FSFs must ensure that the structural integrity of their grease interceptor is intact and working properly.

Pumping manifests and cleaning logs spanning the previous 24 months must be kept on site. To access a blank grease interceptor maintenance cleaning log, click here.

All waste removed from grease interceptors must be disposed of at a KUB Approved facility.

Following a grease interceptor inspection, KUB will provide a copy of the completed inspection form and any other documentation associated with noncompliant issues observed.
